Vietnamese smoked duck noodle salad

Smoked duck breast, sliced

Dried vermicelli noodles (beehoon)

Kadoya roasted sesame oil

Medium carrots, peeled julienned

Coral lettuce, roughly chopped

Japanese cucumber, ribboned

Butter lettuce roughly chopped

Red chilli, finely chopped

Fresh cilantro roughly chopped

Fresh mint leaves torn

【Asian salad dressing】

Kadoya roasted sesame oil
2 tablespoons

Fish sauce
1 tablespoon

Juice of lime
1 (about 3 tablespoons)

Maple syrup
1 ½ tablespoon

Salt and black pepper to taste
Directions

Soak dried vermicelli noodles in warm water until softened, about 15 minutes.

Drain and toss with 2 teaspoons sesame oil to prevent clumping and drying out.

Toss together all the ingredients for the salad except smoked duck breast.

In a bowl whisk together all the ingredients of the salad dressing. Season with salt and black pepper to taste.

Serve smoked duck breast on top of vermicelli noodle salad with dressing on the side.
