Baba ganoush (eggplant caviar with sesame)
Ingredients (for 1 bowl *4 servings)

Eggplant

Kadoya roasted sesame oil
1 tablespoon

Tahini (sesame paste)
1 tablespoon

Lemon juice
1/2 lemon

Chopped parsley
1 tablespoon

Salt and pepper
Directions

Preheat oven to 180°C fan oven.

Place the eggplant in a baking dish and bake for 1 hour. Leave it to cool.

Remove the flesh from the eggplant with a teaspoon. Discard the skin.

Place eggplant in blender and add lemon juice, tahini, parsley, and sesame oil. Season with salt and pepper.

Blend, but not too long to keep the texture a little thick.

Set aside in a cool place.
