Sesame oil-flavored Spanish omelet

Peel and cut potatoes in half, then slice into thin 5mm. Cut onion and garlic into thin slices. Cut the broccoli into small bunches. Put olive oil and garlic in a frying pan and heat. Add the onion and potatoes and stir fry for a while. When the potatoes are transparent, add the broccoli and stir fry until cooked all the way through.

Break the eggs into a bowl, stir well, season with salt and pepper; while the vegetables from 1 are still hot, add them to the bowl with the eggs and stir well.

Add 1 tablespoon of Pure Sesame Oil to the pan and when the oil is warm, add 2 and stir widely, cover and cook. When the surface of the egg is set, turn over using the lid and cook until the inside is quickly cooked.

Cut the omelette from 3 and place on a plate, garnish with baby leaves and cherry tomato salad tossed with salt, pepper and Pure Sesame Oil.
