Chinese steamed cod fish
Ingredients (for 4 servings)

Cod fish fillet/steak

Large slices ginger

Thumb ginger, peeled & julienned

Scallion, shredded

Sprigs of coriander, cut to 2 inch pieces

Soy sauce
1 tablespoon

Sugar
1/2 teaspoon

Chinese cooking wine, divided
2 tablespoons

Fresh cut chilli (optional)

Cooking oil
1 tablespoon

Kadoya roasted sesame oil
1 tablespoon
Directions

Bring steamer to a boil on high heat.

Place sliced ginger on a heat-proof plate and place fish on top of ginger. Then pour over 1 tablespoon of Chinese cooking wine. Sprinkle a pinch of salt on top of the cod fish.

Carefully place the dish in the steamer, cover, and steam for 10 minutes.

Make sauce mixture by adding together sugar, soy sauce and Chinese cooking wine.

When done, remove from heat and drain the steaming water collected on the dish. Then pour sauce mixture into the dish.

Place ginger, scallion, and coriander on top of the fish.

In a saucepan, heat cooking oil and sesame oil until it starts to smoke.

Remove from heat and immediately drizzle over the scallion and ginger mixture.

Serve immediately.
