Directions

Rub the chicken breast with salt, sprinkle with sake, and let stand for 10 minutes. Slice the red onion. Put chicken and 400cc water in a pot and bring to a boil, then simmer over low heat for 10 minutes. Remove chicken from heat and slice.

Bring a large pot of water to a boil and cook rice noodles as indicated.

Add granulated chicken broth to the boiled chicken soup from 1, add red onion and bean sprouts and cook lightly. Season with fish sauce and sugar.

Add boiled and drained rice noodles to 3 and serve. Sprinkle with fried onions and green onions, garnish with cilantro and lime wedges, and finish with a drizzle of Hot Sesame Oil.
