Three cup Tofu (San Bei Dou Fu)
Ingredients (for 4 servings)

Firm tofu/tau kwa

Ginger

Cloves garlic, smashed

Packed fresh basil leaves (Thai or Sweet)

Corn starch for coating
5 tablespoons

Oil for cooking

Coriander leaves for garnish

【Sauce】
-
Chinese cooking wine
4 teaspoons

Light soy sauce
4 tablespoons

Kadoya hot sesame oil
4 tablespoons

Sugar
1 tablespoon

Water

Directions

Mix the sauce ingredients in a bowl until well combined and set aside.

Pat dry tofu with paper towels and cut into ½ inch thick cubes.

Place corn starch in ziplock bag and add tofu. Gently shake to coat tofu cubes with corn starch.

Heat oil in shallow pan and pan-fry tofu until golden on both sides.

Heat 2 tablespoons of oil in a clean frying pan.

Saute ginger slices until the sides starts to crisp then add garlic to cook until fragrant.

Pour in the sauce and tofu. Gently toss and allow sauce to reduce.

Remove from heat and stir in basil. Serve garnished with coriander leaves.
